M's Easter chocolate cake
Hi Sweetheart,
This is the one I used .. although I doubled up to get the one I did for us as well.
D took them out of the oven at approximately 40 minutes as I was coming back from GC at the time. As long as they are slightly coming away from the edge and practically springing back when you press them then they should be done.
For one cake the ingredients are as follows:
6 1/2 oz Self raising flour
5 oz caster sugar
2 eggs
1/4 pint sunflower oil
1/4 pint milk
1 teaspoon bicarbonate of soda
2 generous tablespoons golden syrup
2 generous tablespoons cocoa
Heat oven to 160 deg C
Grease and line 2x8” sandwich tins with greased greaseproof paper
Blend all the ingredients together until smooth.
Pour into the tins and bake for 40 mins.
Cool and then remove paper.
Fill with Daddy’s raspberry jam or your own deliciousness of choice
For the icing.. (enough to cover the top and sides of one cake)
2oz butter or marge .. I used Stork
1 x 150g Tesco Dark cooking chocolate
6 tablespoons water
14oz icing sugar.
Break the chocolate into pieces and put in a bowl with the water.
Melt in the microwave as per instructions on the packet (1-2 mins?)
Add the butter and when the butter is melted add the icing sugar.
I used a hand mixer to mix it together instead of sieving my icing sugar and added a couple of tablespoons of milk to get it smooth and spreadable.
After a few minutes it should be ready to put on the cooled cake... if you leave it much longer it will set quite hard
If you want softer icing it’s better to go the buttercream route .. here is a Mary Berry one. (https://www.bakingmad.com/ recipes/mary-berry-chocolate- cupcakes )
For the Buttercream
- 60g Unsalted butter (softened)
- 30g Cocoa powder
- 3 tbsp Milk (whole)
- 250g Silver Spoon Icing Sugar
To make the chocolate icing melt the butter and pour it into a bowl. Sift in the cocoa powder and stir in the icing sugar a little at a time to make a glossy and spreadable. If the icing is too thick, gradually add the milk until it reaches the desired consistency. Pipe over the cupcakes, sprinkle with chocolate decorations and leave to set before serving.
Love
Mummy
