Burritos

1 meal worth:

1 tin pinto beans
1/2 cup rice
250ml veg stock(1/2 stock cube)

Bring the beans, rice and stock to the boil, then let simmer for 20 minutes.

Meanwhile, fry 1/2 onion in water or oil until translucent, then add 1 diced pepper and 1/4tsp chilli powder, 1/4tsp cumin and 1/8tsp cayenne and fry for 2-5 minutes.  Add mushrooms if interested.

Grate some cheddar, maybe some lettuce if going to eat now.

Make burritos - this did 6.
