Making citrus cheesecake.

Make up half a jelly and mix in with the cheese.

Make up the rest and use as the topping.


Half a jelly was quite a lot for the mandarin cheesecake.  Trying 4/12 cubes for the raspberry.
Try 360g biscuit( 70g ginger, rest digestive), 147g butter.

Conclusion: better to do half a jelly than 4.
Probably 1pot mascarpone, 1 pot soft cheese simpler.

Raspberry one had 125g mascarpone, 100g soft cheese, 200g greek yoghurt and 1 sachet gelatin.
70g ginger biscuits not noticeable. Next time try 320g biscuit but same butter ratio.
