Sultana cupcakes

175 g butter
115 g sugar
2 eggs
230 g self-raising flour
1 lemon rind grated
1 cup sultanas
1/4 cup milk

Method

  • STEP 1Cream the butter and sugar.
  • STEP 2Add eggs, self-raising flour and lemon rind.
  • STEP 3Add milk until it becomes a porridge like consistency.
  • STEP 4Add sultanas and mix well.
  • STEP 5Bake for 12 minutes on 210C.
