This makes 4 large.. they do freeze.
I do 3 eggs worth usually ie. 3/5ths of all quantities except I still do the one large apple and carrot and same qty of booze!
That makes 2 like the one I gave you and 1 slightly larger.
400g sultanas
400g currants
400g raisins
100g mixed peel (or mixed dried fruit to replace the first 4 ingredients)
400g brown sugar (less if preferred)
400g suet (less if preferred)
5 eggs
3/4 pint milk
125g self raising flour
300g fresh breadcrumbs
1 large carrot grated
1 large apple grated
Wine glass of spirits... we have used brandy, peach brandy,apricot liqueur .. as you like
2 teaspoons mixed spice
- Mix all ingredients together
- Divide into pudding basins
- Cover with pleated greaseproof paper and aluminum foil.....or basin lid (not air tight).
- Steam for 5 hours and then 1 hour on day of serving. Or in pressure cooker for approx 2 hours or so (I can do 2 small ones at once one on top of the other) and reheat in microwave on the day.
- If frozen , let thaw before steaming or reheating on the day.
