self-saucing chocolate pudding

INGREDIENTS

60g butter
225g self-raising flour
200g caster sugar
25+35g cocoa powder
180ml milk
2 tsp vanilla extract
175g soft brown sugar

METHOD

Melt 60g butter in the microwave in a deep, 20cm round dish. (Largest ceramic mixing bowl appears to work.)
Sift in 225g flour, 200g sugar and 25g[0] cocoa powder, add 180ml milk and 2tsp vanilla extract, and mix well.
Sprinkle 175g[1] soft brown sugar and the remaining 35g cocoa powder over the top and pour in 300ml boiling water – don’t stir.
Cook in the microwave on High (800W) for 8 minutes.
Allow to stand for 5 minutes before serving with cream.

[0] - So we failed here and put all the cocoa powder in. It appeared to work...
[1] - about 120g was sufficient.
