Red Pepper and Sweet Potato soup

Chop 1 onion
Chop 2 red peppers - reserving a little for decoration.
Dice 500g sweet potato
Throw into saucepan with 250ml white wine (optional)
1 litre vegetable stock.
Bring to boil and simmer until veg is cooked.
Blitz till smooth
Return to pan and add either 2 sachets coconut cream or 1 can coconut milk (if using milk, reduce volume of liquid)
Add juice of at least 1 lime or to taste and S and P.
Warm again until cream is melted.
Serve with lime wedges and enjoy!
