Jam
Made strawberry jam. From 2kg frozen strawberries. And 2kg sugar and a couple of sloshes of lemon juice. Took a while to boil off extra water. Then once above 100C, was quite quick. It just hit 106C. Probably next time should stop as it hits 105C.
Can add redcurrants to strawberry jam to help set.
2015:
1347g strawberries
1150g granulated sugar (trying to make it less set)
5g lemon juice....
Made 5 jars

2496g strawberries and redcurrants. About 200g redcurrants included there.
1872g sugar to lower the sugar:fruit ratio, as last batch solid and have redcurrants this time adding to the pectin (0.75:1)
