Apple sponge



Eve’s Pudding
Ingredients

  • 190g margarine
  • 190g sugar
  • 3 eggs
  • 190g self-raising flour
  • 1.5*500g /1lb apples - not sure - I did 4
  • 50g-100g sugar (to taste and according to sweetness of apples) - I did 20g.
Cooking Directions
  1. Preheat the oven to 180 degrees C
  2. In a large bowl, cream the butter and sugar together until it is light and fluffy
  3. Add the eggs and flour and mix together thoroughly
  4. Grease the baking dish you are using with a little margarine
  5. Peel and slice the apples
  6. Arrange the apples in the bottom of the baking dish
  7. Sprinkle with sugar
  8. Spoon the sponge mixture over the top of the apples
  9. Bake in the oven until for 35 minutes or until the sponge is set and golden brown on top
