Turkey Pie
Thanks to a generous donation after Christmas, we had a small bag of leftover turkey so we decided to make a pie.
The filling was onions (about six or eight very small ones) and mushrooms (one small punnet), fried. Then vegetable stock and sage added and reduced down for a bit. I probably added some pepper as well. Then, once it had simmered for half an hour or an hour or so, I turned off the heat and added in two chopped leeks, the turkey (chopped) and some bacon (about two rashers' worth, shredded).
Frank took the puff pastry that had been living in the freezer forever, and after an hour and a bit of leaving it out, and a titchy bit of microwave defrosting, managed to line the dish (greased with butter). We blind baked the base, then added the filling. After half an hour in the oven, we had a delicious dinner. And some spare filling!
