Bakewell Tart


4oz shortcrust pastry - normal (like here)
50g marg
50g caster sugar
50g ground rice
25g ground almond
1 egg
2tbsp jam
few drops almond essence - can be missed out

Line 7" tin with pastry
10min blind bake
Spread jam on
Cream the marg and sugar
Mix together ground almonds + rice.
Add to creamed mixture , alternately with the beaten egg.
Spread over jam
 Decorate with a lattice of pastry strips and blanched almonds
Bake in a moderate oven - 190C for 40-45 minutes

Notes: This one is in our larger dish so is made using the same recipe and quantity as Mary Berry's pastry .  Makes 8 jam tarts additional or could be pastry decoration on top.  The egg white was added to the beaten egg to scale that up.  So ingredients were:
  • 92g? caster sugar and rice - should use less rice next time?
  • 46g almond
